Water observed on floor outside walk in cooler, floor in walk in cooler recently washed and leaked out to exterior. Wipe up water pooled under dry storage area.

Pizza topping cooler, sauce 3.8C, caramelized onions 4.0C using Delta Probe thermometer. Operator has lowered the inserts in the cooler, inserts now sit at bottom, which has lowered the temperature of the food. Lids are placed on top of the inserts to help keep cold in and shield from heat from the pizza oven. Operator will still time stamp pizza toppings before lunch rush when lids will not be on the inserts.
