Observation: 1) In freezer #1 and #1 food debris accumulations observed during time of inspection.
2) In the back of kitchen by donut station food debris observed. Date to be corrected by June 6/22.
3) Underneath Rutunal oven some pooling of water and food observed. (corrected during inspection).
Corrective Action(s): 1 - 3 thoroughly clean the above mentioned areas. Focus cleaning efforts in and around, behind and underneath equipment.

All hand sinks equipped with hot/cold running water, liquid soap, paper towel 220-300ppm Quats sanitizer available. Wiping cloths stored in solution.
All hot holding at or above 60C.
All under counter coolers at or below 4C.
*Prep inserts 4-5C. All food used within 2 hrs. Education provided re; only filling inserts halfway.
Ice machine kept in clean and sanitary manner. Scoop stored properly . Overall sanitation in front of restaurant satisfactory. food surface areas clean and sanitized frequently.
Back:
* Hand sinks equipped with hot/cold water, liquid soap, paper towel.
* 3 compartment sink available 200-300ppm Quats detected.
* High temperature dishwasher registers 72.2C.
*Quats sanitizer available for sanitation. 200-300ppm.
