203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Sauces were cooled in bus pans completely filled to the top. Sauces ranged from 14C to 25C. All containers were covered with lids and stacked on top of one another. Operator claimed sauce was made at 4am this morning.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Do not fill bus pans more than half way and sauces must be stirred and do not completely cover containers, otherwise steam does not escape. Sauces were transferred to other bus pans and only filled half way at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle in the front was too strong - resulted in test strip bleaching out.
Corrective Action(s): Bleach sanitizer at 100ppm to 200ppm is required for sanitizing food contact surfaces. Concentrations in excess of 200ppm may be toxic for human health. Spray bottle was emptied and staff refilled spray bottle at 200ppm bleach - 2.5mL bleach per spray bottle.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Droppings were found in the office area under the filing cabinet and behind the gas cylinders.
2) Grease was found accumulating on the vent hood and food debris was found inside and behind equipment. Facility currently cleans weekly.
Corrective Action(s): 1) Clean areas affected by rodent droppings using a 1:10 bleach solution. Continue to monitor for pest activity and follow the pest control advice.
2) Ensure equipment and facility is maintained in a clean and sanitary condition to prevent potential pest attraction. Cleaning frequency may need to be increased.

Observation: Prep cooler door seals are broken and require repair and walk-in cooler door seal at bottom of door is broken
Corrective Action(s): Have cooler door units repaired and ensure all cooler doors form a proper seal - this will prevent the loss of cold refrigeration air and also prevent debris from accumulating in the door seals.

Comments

-Walk-in cooler (kitchen) was at 4C to 5C (fan at 3C). Have technician service or adjust cooler unit.
-Walk-in cooler (back) was at 2C.
-Walk-in freezer was at -10C.
-Both prep coolers were at or below 4C (top and bottom).
-Bar cooler was at 4C.
-Chest freezers in back storage area and banquet room were at -18C.
-Upright freezer was at -10C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Did not observe improper hand hygiene practices at the time of inspection.
-Bleach sanitizer pails in kitchen properly labelled and tested at 100ppm.
-Raw foods were properly stored separately from ready-to-eat foods. Scoops stored in a sanitary manner.
-Facility is serviced by a professional pest control operator. Rodent infestation has decreased significantly - a few droppings found in the facility. Facility has a drain fly issue in the kitchen. Have pest control service for drain flies.
-Washroom clean and sanitary.
*Operator FoodSafe Level 1 certificates issued prior to July 29, 2013 will expire on July 29, 2018. In order to meet the FoodSafe Level 1 requirement, certificates must be valid/not expired.
