Comments

- Facility was not in operation at time of inspection. Kitchen is currently used for private events and preparation of dishes for catered events.
- Operator is looking to update business operations/menu items in the future. Ensure to submit all proposals and food safety plans prior to making any changes.
- Hand sinks were properly supplied
- Bleach sanitizer solution available in spray bottle at 200 ppm chlorine. Slightly strong, ensure to mix 1/2 to 1 tsp of bleach per litre of water.
- High-temperature dishwasher reached 71C at the dish surface during the rinse cycle.
- Both main coolers in kitchen were turned off at time of inspection. No potentially hazardous foods stored on-site at time of inspection. Past temperature records were still available onsite for review.
- Ensure all coolers are capable of maintaining temperatures at 4C or colder when in use.
- One chest freezer was in use; measured at below -18C.
- All equipment maintained in sanitary conditions
- General sanitation was satisfactory
- No signs of pest activity noted at time of inspection
