Corrective Action(s): Keep large tub of batter stored in cooler unit at 4C or less. Small inserts on cookline okay to be at room temperature as long as 2 hour turn over is guaranteed.

Corrective Action(s): Keep all foods stored off the ground.

Observation: Noted fruit flies in back storage area and around deer dispenser in service area.
Corrective Action(s): Do a thorough cleaning in these areas and increase pest control services during the warmer months to stay on top of the issue.

Comments

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
Two sliding two door cooler units both at 4C.
Creamers in front service area on ice.
Hot holding of fish, fries and soups all higher than 60C.
Walk in freezer -12C.
General sanitation satisfactory.
Hood ventilation system clean.
Light covers in place.
Back door to hallway was closed at time of inspection.
Ice wand available in freezer unit.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Chlorine sanitizer in container with cloths submerged 100ppm.
High temperature dish washer achieved 71C (with thermolabel).
