Observation (CORRECTED DURING INSPECTION): 50 ppm Quats solution observed at back kitchen sanitizer bucket. 200 ppm Quats is required to sanitize food contact surfaces and thereby reduce the number of pathogens to an acceptable level for public health. Staff were notified and sanitizer solution was changed at time of inspection. Concentration recorded at 200 ppm. Sanitizer solution must be changed often (e.g. every 2 hours or sooner if dirtied).

Observation:
Observation #1: Temperature gauge for double-door cooler is not working. Gauge is required to display cooler temperature to ensure that potentially hazardous foods are stored at </= 4C. [Date to be corrected by: November 29, 2018]

Observation #2: Multiple broken pieces of equipment observed (e.g. bin for making onion rings, hot-holding containers). Broken pieces of equipment may fall into food and harm customers. [Date to be corrected by: November 29, 2018]

Observation #3: Paper towel dispenser in kitchen has broken some time ago. [Date to be corrected by: November 29, 2018]
Corrective Action(s):
Corrective Action #1: Replace temperature gauge so that staff can record the temperature of the cooler unit.

Corrective Action #2: Conduct a thorough look at equipment and discard and replace broken pieces of equipment/utensils.

Corrective Action #3: Replace the paper towel dispenser

General Comments
Back door was open at time of inspection. Staff said that they are waiting for maintenance personnel for the ventilation unit. This back door must remain closed at all times, as it will allow entry of pests (E.g. rodents, flies) otherwise. Consider installing a screen door if air flow required.
