Observation: The wooden shelves in the walk-in is dirty and difficult to clean. Buckets of tamarind sauce cooling on the floor in a high traffic area without covers.
Corrective Action(s): Clean the shelves. Cover the bus pans and trays of food. Obtain shelving units with surfaces that are easily cleanable. Protect buckets of food from contamination during cooling.

Comments

The dry storage room has been reorganized. General sanitation has improved. Management will be obtaining a storage unit to contain the bags of flour to protect from pest.
Handwashing stations are satisfactory.
