Observation: Walk-in cooler at 7.5 C. Staff stated they were opening and closing cooler during busy hour and prep time. Breaded chicken registered at 6 C. Grilled chicken at 7 C. No logs available.
Corrective Action(s): Walk-in cooler must be at 4 C or below. Check temperature of walk-in cooler again in 1 hour and ensure it drops to 4 C or below. Adjust temperature setting or repair if necessary.

Follow-up inspection PKUR-CFFSAF

Front cooler has been replaced. Bottom part of cooler registered at <4 C. Top inserts some items were above 4 C (chedder cheese was at 8 C, feta chese was at 9 C, diced tomatoes were at 6 C) - these items had been stocked about 1 hour ago - ensure these are used within 2 hours or placed in colder part of cooler after 2 hours). Only fill inserts 1/4 or 1/2 full so that items are not at >4 C for more than 2 hours if top cover will not be kept on.
Store sprouts in the undercounter part of the cooler as they are not used often.

Grill cooler registered at <4 C.

Temperature logs not maintained - ensure temperatures are checked daily and logs are maintained.

Quats sanitizer in bucket registered at 400 ppm.
Staff indicated quats solution for dishwashing made at 200 ppm.
