205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Chickpea curry in covered container in the walk-in cooler measured at internal temperature of 11'C with probe thermometer (calibrated on June 2, 2023). Staff stated that the the curry was prepared yesterday night (>6 hours ago). Staff discarded the chickpea curry during inspection.
Corrective Action(s): All potentially hazardous foods must be cooled from 60'C to 20'C within 2 hours and from 20'C to 4'C within 4 hours (total of 6 hours). Potentially hazardous foods which do not reach 4'C within 6 hours must be discarded. Follow proper cooling procedures (as per approved food safety plan) by mixing foods frequently, mixing foods with an ice wand or placing food containers in ice baths.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration after running it three times. Operator replaced the sanitizer pail during inspection. Thereafter, the dishwasher measured at 50 ppm chlorine concentration at the plate surface.
Corrective Action(s): Maintain dishwasher to ensure it is capable of dispensing 50-100 ppm chlorine concentration residual at the plate surface for adequate sanitation of dishes and utensils. Verify sanitizer strength with chlorine test strips at least once daily (or as per approved sanitation plan).

Observation:
1. Raw eggs observed stored on top of ready-to-eat sweets in the walk-in cooler.

2. Cardboard box of carrots observed stored directly on the floor in the walk-in cooler.

3. Dry-stored ingredients observed stored uncovered next to the walk-in cooler. Staff placed the lids on the dry storage bins during inspection.
Corrective Action(s): Keep all foods protected from potential contamination at all times by keeping foods covered and stored at least 6 inches off the floor. Store all raw meats and eggs on bottoms shelves and away from ready-to-eat foods to prevent contamination of food.

Observation: Ventilation canopy observed with heavy grease build-up during inspection. Ventilation canopy was due for service in February 2023.
Corrective Action(s): Degrease and clean ventilation canopy and/or contact maintenance company to complete bi-annual cleaning. Ensure the clean and degrease the ventilation canopy between serviced maintenance (as per approved sanitation plan) to ensure the premise is maintained in sanitary manner and to prevent contamination of food.

Observation: Multiple ceiling tiles in the kitchen are observed peeling. A paper-like material is observed hanging from the ceiling in multiple locations.
Corrective Action(s): The current ceiling tiles are a potential physical contaminant and must be replaced with non-porous, easy-to-clean surfaces. Replace ceiling tiles with t-bar ceiling. Submit plans to the health inspector for review.

- General sanitation is okay during inspection (with exception of ventilation canopy)
- All handwashing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in buckets with wiping cloths (X2) measured at 200 ppm chlorine concentration with test strip
- Equipment stored in a sanitary manner
- No signs of pests during inspection
- FOODSAFE Level 1 trained operator available on site
- Health permit posted in a conspicuous location on site
