-Time stamping is in place for items being held at room temperature. Products were checked at the time of the inspection and none of the time frames had lapsed. -Hot held food in unit at front was keeping food 60C or greater. -Some cleaning had been completed in the deep fryer area; however, the filters in the exhaust canopy had not yet been cleaned and still had an accumulation of dirt and grease. Once staff were notified, the filters were cleaned. Ensure this is being completed as part of your regular cleaning schedule.
