Hot holding units: food stored at 62 to 100C (all three units were turned on)
No food stored on floor of walk-in freezer but cleaning on the floor is required.
Quats test strips available, please review how to use test strips with staff
Sanitation improved around icing area but fruit flies is still at similar level compared to last visit. Please inquire pest control technician for other methods to combat with fruit flies situation.
Recommend removing all organics (food debris), sugar and moisture in all corners and crevices nightly to prevent harbourage. March 30, 2018 service report reviewed onsite.
Temperature records has new system in place, only able to read previous day record at time of inspection.
Supervisor understands importance of temperature taking.
