- All coolers were 4 C or colder - All freezers were -10 C or colder - Hot holding was 60 C or hotter - Hand sinks had liquid soap, paper towel, hot and cold water - Spray bottles had 200 ppm quat - Dishwasher had a final rinse of 84 C at plate and 90 C at the gauge - Glass washer had a final rinse of 25 ppm Iodine - A couple flies noted in/around mop sink closet, pest control is on contract. No other signs of pest activity noted. - NOTE: temperature log is available, however temperatures are not recorded daily. If temperatures are recorded above 4C, make a note of corrective action taken and the resulting temperature.
