Observation: Found food and grease accumulation under and behind cookline and coolers, also found dust accumulation on ceiling tiles around ventilation system.

- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water
- Spray bottles had 200 ppm quat
- Dishwasher had a final rinse of 84 C at plate and 90 C at the gauge
- Glass washer had a final rinse of 25 ppm Iodine
- A couple flies noted in/around mop sink closet, pest control is on contract. No other signs of pest activity noted.
