Observation: 1. Some food debris noted in dry storage area. Ensure to regularly clean under the cooking line as well as under the dry storage area.
2. Ice scoop in bar area was left in the ice box with the handle in direct contact with the ice.
Corrective Action(s): 1. Remove any food debris and keep all foods stored off the floor.
2. Keep ice scoop handle out of ice box at all times. Otherwise your ice will get contaminated.

Prep cooler (bottom) at 1 deg C
**Ensure that all food in the inserts in the prep cooler top area are used up within 2 hours. If not, they must be discarded. Do not fill the inserts to the top as you may not be able to finish all of the food in the inserts within 2 hours.
Walk in cooler: 2.9 deg C
Walk in freezer: -10 deg C -->observed one of the two freezer fans not in operation. Discussed with kitchen manager who indicated that the freezer was in defrost cycle which happens at approximately 2pm each day. Once the cycle is over, both fans resume normal operation.
All other freezers at -18 deg C or less
All other coolers at <4 deg C
Chemical dishwasher achieved 50 ppm chlorine residual after rinse cycle at dish level
No signs of pests at time of inspection; back door was kept closed
