Observation (CORRECTED DURING INSPECTION): Mouldy dough was found stored on the shelving unit.
Corrective Action(s): Ensure foods are properly stored to prevent mould growth. Dough was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 4 containers of butter sauce made this morning were in the walk-in cooler at 23C.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Sauce was returned to the walk-in freezer for rapid cooling at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Prep cooler foods were at 10C.
Corrective Action(s): Potentially hazardous foods must be stored at or below 4C to prevent the growth of pathogens and or the formation of toxins. Potentially hazardous foods were moved into a cooler at 4C at the time of inspection.

Observation: Foods in the walk-in coolers (main kitchen and back) were uncovered.
Corrective Action(s): Ensure all foods are properly covered and protected from potential contamination. If cooked foods are left uncovered for cooling, they should be covered after they have properly cooled.

Observation: Minor cockroach and rodent activity was observed in the facility.
Corrective Action(s): Continue to monitor pest activity and contact pest control services as needed (facility is currently serviced monthly). Areas affected with rodent droppings need to be cleaned and sanitized using a 1:10 bleach solution.

Observation: Food debris was found in the prep cooler door seals and inside prep cooler and under shelving units.
Corrective Action(s): Ensure equipment is maintained in a clean and sanitary condition and cleaning is carried out nightly to prevent potential pest attraction.

Observation (CORRECTED DURING INSPECTION): Utensils were wrapped in aluminum foil.
Corrective Action(s): Do not wrap utensils with aluminum foil. Surfaces must be smooth, non-absorbent, and easily cleanable. Aluminum foil cannot be properly cleaned and sanitized after each use. Aluminum foil was removed from utensils at the time of inspection.

Comments

-Inspection conducted with Student Environmental Health Officer.
-Walk-in cooler (main kitchen) was at 4C.
-Walk-in cooler (back area) was at 4C.
-Walk-in freezer was at -14C.
-Prep cooler (right side) was at 4C (top and bottom).
-Bar area cooler was at 4C.
-Upright freezer was at -16C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails were labelled and tested at 100ppm.
-Ice machine sanitation was satisfactory - additional attention required long the top cover area.
-Facility is serviced monthly by professional pest control services.
-Washroom clean and well maintained. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 23, 2023.
