Hot holding case - upper section is 60 Celsius/140 Fahrenheit. Good.
- lower section - upper shelf is ~100 F/40 C
- bottom shelf is < 40 C. - note no product in lower case at time of inspection.
Discussed at length.
- technician for the hot-holding unit advised Nesters to have the thermometers touching the metal plate "to get an accurate temperature." However this is not an accurate measurement of hot holding unit temperature.
- metal transmits heat well. Food does not transmit heat very well, nor does plastic or air. The hot metal plate will only heat the food touching it, to a depth of 1/2 cm or so. The rest of the product will continue to cool unless the air around it is also > 60 Celsius.
- What ultimately matters is not the metal temperature or the air temperature, but how hot the unit is able to keep the food. If the air temp is < 60 Celsius the food will lose heat and become < 60 Celsius.

For now you can use a 2 hour rule. If chickens are stored < 60 Celsius they can be kept for up to 2 hours. After theat they must be discarded. This method requires careful documentation.
