Observation: - Mouse droppings noted at edge of floor under dry storage shelving at the back of the premises
- Mininmal amount of mouse droppings noted on lowest shelves under service counter (where pantry items stored)
Corrective Action(s): - Clean up droppings and disinfect affected areas with bleach solution. Monitor areas to establish if rodent activity is current or from past issues. If any additional droppings are noted, clean up and disinfect promptly.
- Keep floor area clear to allow for cleaning and monitoring for pest activity and to ensure harbourage areas are not created.
- Continue regular pest control service

Observation: - Minor amount of moisture and grime noted on floor where ice machine and dishwasher are located.
Corrective Action(s): - Clean floor to remove moisture and grime. Ensure this area is maintained in sanitary condition.

Comments

- Premises and equipment maintained in sanitary condition aside from area noted in above violation
- Handsink in food preparation/service area was supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder
- Freezers were maintaining products frozen
- High temperature dishwasher operational and met required sanitizing temperature. Temperature measured at dish surface: 80.7C
- Hot and cold running water supplied to warewashing sink. Plugs/stoppers present.
- Reviewed cleaning and sanitizing procedures for ice cream machine. Removable components are washed in dishwasher. Remainder of machine is clean in place - wash, rinse, sanitize with chlorine bleach solution. Chlorine test strips present for verifying sanitizer concentration.
- In use wiping cloth kept in sanitizer solution - 200ppm chlorine. In use wiping cloth on counter had chlorine sanitizer residual.
- Operator reported in use ice cream scoops are kept in ice water with ice water being changed at least every hours.
- Pest control contract in place with monthly service. Operator to send most recent report to EHO for review.
- Staff/public washroom was supplied with liquid soap and paper towel.
- Foodsafe requirement met at time of inspection
- Ice cream mix is supplied from Birchwood Dairy (as well some finished flavours). Flavourings (inclusions) added into pre-made mix supplied from Birchwood Dairy.
