Comments

A thorough clean up has been done throughout the kitchen and food storage areas.
However, the following items are still outstanding:
1. Clean space between the line cooler and prep table to remove grease build-up.
2. Clean the remaining ceiling tiles ( By Feb 25, 2020).
3. Clean floor underneath the double food preparation sink ( Feb. 15, 2020).

Fume hood has been professionally cleaned and serviced. Good. *Ensure to remove and clean the filters twice a month
A new rice cooker has been purchased. Good.
A new cutting board has replaced the old one, now in use at the tempura station.Good.

A new high temperature dishwasher has been ordered and will be installed within a week.
Ensure to monitor and record final rinse temperature every day. Until then, monitor and record dishwasher chlorine levels daily ( must be 50-100 ppm).

All raw meats, poultry and fish are stored below any ready to eat foods or produce.
A reminder to all staff to record the cooler temperatures from the actual thermometers placed within each units.
Chemicals are now stored away from food items.
