Observation: Ice maker found to be in need of through cleaning.
Corrective Action(s): Remove all ice. Throughly scrub the interior of the ice bin and other surfaces in the ice maker. Use chemicals approved by the manufacturer's as well their recommneded cleaning procedures and frequency for ice maker cleaning ( By Oct 3, 2018)

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of food debris and dirt noticed in the followng areas:
1. Under the sandwich storage cooler in the deli sandwich preparation area
2. Underneath the stainless steel hot holding unit
3. In the gap between broken section of the countertop in the deli
4. Underneath the shelves in the dry storage area.
5. Underneath all shelves espcially meat storage shelves in the walk-in coole
6. All floor drains especially near the ice maker
7.In the air vents of deli coolers and sandwich preparation cooler.
8.Underneath the air vent grills in most coolers
Corrective Action(s): Throughly clean all of the above areas to remove build up of food debris and dirt ( By Oct 1, 2018)

Observation: Counter top in the deli area found to be deteriorating.
Corrective Action(s): Replace or refinish the counter top so that the surfaces are easy to clean and sanitize ( By Oct 10, 2018). Remove all
food debris from the gap immediately.

Comments

* Adjust all storage shelves so that there is at least 6 inches gap from the floor to allow to easy cleaning and visibility.
* Internal temperature of hot held chickens registered 57-60 degrees C.
Adjust the unit so that it is capable of maintaining cooked chickens at 60 C or hotter at all times.
* Recommended using commercial food premises approved floor cleaner for cleaning floors and de-greasers for cleaning grease laden equipment.
Consult a chemical supply company to determine appropriate cleaning agents for premises needs.
* Submit a revised copy of the sanitation plan outlining cleaning procedures for all coolers, ice maker, meat slicers and other food equipment.
* Do not keep cleaned and sanitized equipment and utensils in the sink for air drying. The sink must be accessible for washing hands and
utensils at all times. Recommended installing a wired rack shelf above the double sink for air drying utensils.

Chlorine Bleach sanitizer in the third sink in meat department tested 200 ppm.
Liquid soap and paper towels available at all hand washing stations.

Note: Baseboards have been installed underneath the cabinets in the meat department. Good.
