Observation (CORRECTED DURING INSPECTION): Two containers of Bush Brand Orange Red food colouring observed on dry storage shelf on site during inspection. Staff removed the containers of food coloring from the shelf to be discarded/and or returned to the supplier.
Corrective Action(s): Do not purchase Bush Brand Orange Red food colouring. Bush Brand Orange Red food colouring is not approved for human consumption as it contains a non-permitted ingredient (INS 122). Ensure to purchase food colourings which are from an approved source and which contain Canadian permitted ingredients.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration with test strip during inspection. Operator contacted repair company during inspection. A 2-compartment sink is available on site for warewashing and sanitizing. Operator was able to demonstrate adequate cleaning and sanitizing of dishes using a large container for sanitizng and the 2-compartment warewashing method.

2. No bleach sanitizer is prepared during inspection. Operator prepared bleach sanitizer in pail with wiping cloth (X1) during inspection. Bleach sanitizer measured at 200 ppm chlorine concentration with test strip.
Corrective Action(s):
1. Use the 2-compartment dishwashing method for cleaning and sanitizing equipment and utensils. Do not use re-usable plates or cutlery until the dishwasher has been verified to be functioning by the health inspector. Approved for SINGLE-USE/TAKE-OUT CONTAINERS ONLY for all customers (dine-in and take-out) until the dishwasher has been verified functioning by the health inspector. 2-compartment dishwashing method sign was provided to operator during inspection.

2. Train all staff to prepare bleach sanitizer in pails with wiping cloths at a concentration of 100-200 ppm chlorine concentration (by mixing 1/2-1 teaspoon of bleach with 1L of water) to adequately sanitize all food contact surfaces. Obtain chlorine test strips to verify and monitor sanitizer strength throughout the day. Bleach sanitizer must be prepared at all times.

Observation (CORRECTED DURING INSPECTION): Tray of food observed directly on top of garbage can during inspection. Staff moved the food off the garbage can during inspection.
Corrective Action(s): Storing food on top of the garbage can could potentially contaminate the food. Ensure to store all food away from potential sources of contamination.

Observation: Multiple drain flies observed on site during inspection. Two fly traps are observed in place in non-food preparation areas. Professional pest control company is contracted.
Corrective Action(s): Monitor fruit fly population and ensure to keep all food covered to prevent contamination. Replace yellow stick fly traps in non-food preparation areas frequently to remove current fruit fly population. Remove any sources of fruit fly breeding/harbouring (e.g. food spills) and maintain the premise in a sanitary condition. If fruit fly population increases, contact pest control company to assess and apply drain treatment as necessary.

Observation: Food processor container observed broken with clear plastic tape placed in multiple spots. Tape is observed covered with food debris.
Corrective Action(s): Discard the food processor container and replace the container with a functioning container which is in good working condition. Broken equipment and tape is not food safe and can potentially contaminate food. All equipment must be in good working condition to be adequately cleaned and sanitized between uses.

Observation: Dishwasher is not able to dispense chemical sanitizer during inspection. Chemical sanitizer measured at 0 ppm chlorine concentration with test strip. Operator contacted repair company during inspection.
Corrective Action(s): Repair the dishwasher to ensure it is able to dispense 50-100 ppm chlorine concentration at the plate surface for adequate sanitation of equipment, utensils and dishware. Obtain chlorine test strips to verify, monitor, and record sanitizer strength daily (or as per approved sanitation plan).
