Observation: In operator's absence, at least 1 staff member must be certified with FOODSAFE Level 1 or its equivalent. Both staff members on duty were not certified with FOODSAFE Level 1. Operator is to maintain a copy of all staff member's FOODSAFE level 1 on-site and to ensure at least 1 staff member on duty holds a valid certification.

Routine inspection conducted and the following were noted.
All cooler units at 4C.
Hot holding temperature for cooked rice and skewers were at least 60C.
General sanitation satisfactory.
No pest activity noted.
Designated tongs used to handle cooked food items.
Food items properly covered.
3 compartment sink method was set-up. Quat solution in the sanitizing sink was at 200ppm.
Freezer units at -18C.
Back storage area satisfactory.
