Observation (CORRECTED DURING INSPECTION): Two square inserts of raw chicken found at 7 degrees C in BOH prep cooler.
Corrective Action(s): moved products to upright cooler.
Do not use the prep cooler until it is repaired and capable of maintaining <4C at all times.

Observation (CORRECTED DURING INSPECTION): BOH sanitizer was in a broken spray bottle that could not dispense sanitizer
Corrective Action(s): Operator discarded bottle and replaced it with a bucket of sanitizer solution.
Ensure that wiping cloths are stored in sanitizer solution when not in use.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Back of house handwashing station turned off at the time of inspection. Operator stated that the water supply was not working.
Corrective Action(s): water supply was working, operator turned on the handwash station.
Handwash stations must be maintained in working condition and supply staff with adequate supply of hot/cold running water as well as liquid soap and paper towels.

Observation: grease build up observed in the following areas;
-Back of house cooler unit doors and handles
-BOH around garbage cans and hard to reach areas
-BOH underneath and between stainless steel countertops
-Front of house walls around drink machine
-FOH equipment such as fan above grill, rice cookers, and under hot holding unit.
Corrective Action(s): Clean the above noted areas. This must be done on a more frequent basis.
