Comments

Routine inspection was conducted. The following was observed.

1. Temperature
All coolers (prep coolers [top and bottom], under counter coolers, 2 door cooer) were at or below 4C.
Freezer was at or below -18C.
Hot held food were at or above 60C.
All cold holding units were supplied with a thermometer.

2. Sanitation
All hand washing stations were equipped with hot and cold running water, liquid soap and paper towels and were accessible.
Two compartment sinks with drain plugs available for manual ware washing.
High temperature dishwasher was measured at 73.5C at the plate level during the final rinse cycle (required minimum of 71.0C)
QUATs sanitizer in spray bottles at 200ppm.
Bleach sanitizer in spray bottles at 100ppm.
Stored slicers were maintained in a sanitary condition.
Overall sanitation was excellent.

3. Storage
All food items were stored above ground at least 6 inches.
All food items were covered and stored in a sanitary manner.
Dry storage area was maintained in a sanitary condition.

4. Pest activity
No visual sign of pests during the inspection.
Pest control company in place on a monthly basis.

5. Hygiene
Staff were observed to be properly washing hands in between tasks and frequently.

6. Administrative
FOODSAFE level 1 certified staff was on duty (June 25, 2023).
Permit was posted in a visible location.
