Comments

-Note: Hot holding unit used for holding pearls is currently broken and time tracking is used. Ensure that pearls are only held for 2 hours and discarded until the hot holding unit is repaired. -Recommend purchasing chlorine sanitizer test strips. Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Temperature records were up to date. Bleach sanitizer in the 3-compartment sink and in the sanitizer buckets was measured at 100 ppm. No evidence of pests. General sanitation was satisfactory.
