- most foods covered within walk-in
- upright cooler measured 2-4C throughout - recommend turning cooler down to help with lunch rush/summer temperatures
- ensure removable parts (cover, extruder plate, blade) from dough mixer are put through the dishwasher; if it cannot be put through dishwasher, it must be washed with the three compartment sink method
- ice wand available - ensure this is used to cool all sauces as the walk-in cooler will not be able to handle cooling the volume of food that is being prepared
