Observation (CORRECTED DURING INSPECTION): - Opened package of tofu was stored on top of insert in prep cooler and the temperature of tofu was 12C.
Corrective Action(s): - Keep potentially hazardous foods at 4C or below. Do not store food products on top of inserts as this is above fill level and cold temperature cannot be maintained.
- Potentially hazardous foods above 4C for 2 hours or more must be discarded.

Observation (CORRECTED DURING INSPECTION): - Operator did not change gloves after touching multiple surfaces within kitchen in which gloves may have become contaminated.
Corrective Action(s): - Gloves must be removed and hands washed and any point gloves may have become contaminated such as touching raw meat or touching surfaces which have not been sanitized (eg. taps, cooler door handles).

Observation: - No thermometer present in prep cooler.

Comments

- Overall sanitation of premises and equipment was satisfactory
- Hot and cold running water was supplied to sinks
- Liquid soap and paper towel was present at handwashing sinks (kitchen and front service)
- High temperature dishwasher was operational. Final rinse at dish surface was 79.4C
- Bleach sanitizer solution present for in use wiping cloths was present in kitchen and bar. Concentration measured 200ppm chlorine.
- Reviewed cleaning and sanitizing procedures for slicer. Operator reported slicer is only used for rare beef and is cleaned and sanitized immediately after use.
- Ice machine appeared clean and maintained. Ice scoop stored in sanitary manner.
- Temperatures checked:
- Walk-in cooler 2C
- Prep cooler 4C
- 2 door bar cooler 4C
- Chest freezer -12C, -14C Note: Door is being replaced on small chest freezer as it has come loose from hinge. Operator reported new one has been ordered.
- Hot held items maintained above 60C. Cooked rice 68C, Soup broth 80C
- Operator reported soup broth is made fresh daily. No cooling/reheating of broth.
- Dry storage room was organized with food products stored on shelving.
- Lights in kitchen have shatterproof tubes.
- No signs of pest activity noted at time of the inspection. Screen door in place at back door. Pest control contract in place with monthly service. Viewed most recent service report (23-Aug-2023)
- Foodsafe requirement met at time of the inspection. One Operator present has valid Foodsafe level 1 certificate.
