Reviewed teriyaki sauce processing - operator now prepares smaller portions fresh daily to be hot held after cooking.

Pre-assembled sushi rolls no longer stored on top of food inserts above cooler compartment. At time of inspection, rolls prepared as ordered.

Hot holding insert for rolls / dumplings 71 C, small volume in warmer insert. Note: Avoid stacking large volumes of these items within food insert as heat will not transfer to products stacked at top.

Ventilation hood has been cleaned and certified by professional cleaning service.

Operator has re-established use of storage locker. Shelving and chest freezer (-17 C) have been re-installed. Ensure no food or supplies for business are stored at home.
