Observation: Multiple Violations:
1) Meat Slicer, Vegetable chopper, dough mixer not cleaned from previous night.
2) Pizza pan storage box needs to be cleaned as food debris has accumulated
3) Food debris found behind chest freezer, under prep cooler and under prep tables
4) Food debris found accumulating inside seals and cracks of prep cooler

Observation: Corrugated plastic trays are NOT suitable for use in Restaurant. The material can not be properly cleaned and sanitized in between using. Pizza sauce accumulates in holes and is not easily removable.

NOTE: Obtain extra sink plug

NOTE: Current Pizza pan separators are of corrugated plastic type. This is unsuitable as the sauce, food and dirt inevitably end up inside the cracks and holes and can NOT be cleaned out. These must be replaced with more suitable material. Obtain more suitable pizza pan separators for use at facility. A solid, durable and easily cleanable material.
