Observation (CORRECTED DURING INSPECTION): Ambient temperature of the cooler nearest the backdoor measured 11C.
Corrective Action(s): Staff moved all potentially hazardous foods to working coolers at the time of inspection and adjusted the cooler. Repair or replace the cooler. Do not use this cooler until it can achieve and maintain 4C or colder.

Observation (CORRECTED DURING INSPECTION): Wiping cloths stored in plain water.
Corrective Action(s): Wiping cloths must be stored in a sanitizer solution. Use a 100ppm chlorine solution of bleach (mix 5mL of unscented household bleach in 2.5L of water). Staff made up a solution at the time of inspection.

Observation:
Debris observed in the following areas:
- underneath the cooler in the front sushi bar
- inside the upright cooler in the back area
- inside the ice machine
Corrective Action(s): Clean and sanitize the noted areas. Staff began washing the ice machine at the time of inspection; staff is also planning on resurfacing the wire racks within the coolers.
