Observation (CORRECTED DURING INSPECTION): Gravy and Mushroom sauce measured to be ~45-58°C at time of inspection. Unit hot water reservoir measured to hold ~65.8°C. Likely sauce was not warmed up to 74°C before placing in hot holding unit.
**Corrected during inspection** Product reheated to 74°C and replaced in hot holding unit.

Ensure all product is heated to 74°C before putting in hot holding.
