Observation: Bins of "clean" utensils being stored in dirty bins with food debris; one bin has an approximately 4" long hair in the bin.
Corrective Action(s): All contaminated dishware/utensils are to be rewashed and sanitized before placing in clean, sanitized containers that have proper covers in place to prevent both physical and microbial contamination.

Observation: .
1) Personal foods in walk-in cooler and stand-up freezer located approximately shoulder height and not labeled.
2) Personal items (purses, jackets, etc) on top of parchment paper in dry storage area right above clean cutlery (see code 301).
Corrective Action(s): .
1) Personal foods must be kept in labeled containers on the bottom shelf of any cooling unit (refrigerator or freezer) to prevent either physical and/or microbial contamination of food.
Note: this requirement also applies to any, and all, personal foods, kept anywhere else in the food service, prep or storage areas - Bottom shelf and clearly labeled.
2) Personal items must also be kept away from food and food contact surfaces that can be contaminated do not keep in the kitchen.

Observation: Food/waste/grease/dirt/mould accumulations behind and under cook line, inside deep fryer cabinets, inside edge of dishwasher box, food racks in both the dry storage area and walk-in cooler, rangehood canopy, top door faces of below counter coolers etc

Corrective Action(s): Premises needs cleaning where these accumulations, spills, splatters have occurred.

All refrigerators and freezers meet requirements, dishwasher 72C at the plate surface (NOTE: make sure that the first load of dishes is cycled through twice to ensure adequate sanitization occurs). No indications of insect or rodent infestation.
