A new floor covering has been installed in the kitchen to replace the tiled flooring that was in poor condition. A metal containment tray is placed under the fryers to catch spilled grease. Ensure that this is cleaned at least weekly. Repair the broken overhead light fixture in the kitchen. Wipe down all shelves surfaces in the kitchen. The IR gun thermometer needs to be calibrated. Ensure the probe thermometer is used for checking cooking temperatures not the IR gun. Men's washroom is odorous. Thoroughly clean all surfaces with sanitizer. Temperature of refrigeration units are satisfactory. Handwashing stations are satisfactory.
