Observation:
- Mouse droppings observed behind the ice machine, by the right corner next to the ice machine.
- Dust build up and stains observed on the wall, on the ice machine.
- Debris build up observed around the door perimeter of the high temperature dishwasher.
- Ice machine (interior panel) observed with stains & debris build up.
Corrective Action(s):
- Clean areas noted above. Ensure ice machine is thoroughly sanitized after cleaning; it should be turned off and empty all ice out to conduct deep cleaning.
- Facilitate deep cleaning of the facility. Empty all cabinets, shelving units and wipe off any stains or debris.

- Ensure cooked pearls are time tracked for 2 hours in room temp. They were being cooked at the time of inspection.
- All coolers at 4C or below.
- All freezers at -18C or below.
- Bubble tea toppings (puddings, jellies) in ice bath; temperature maintained.
- Bleach sanitizer in bucket measured at 200ppm.
