Observation: 1. Dry looking rodent droppings noted under the front hand sink, in between steamers, and back corner of employee only storage room.
2. Fruit fly activity noted in the kitchen.
Corrective Action(s): 1. Clean and sanitize areas impacted by rodent droppings.
2. Improve overall floor and hard-to-reach area (wall to floor joint) throughout the kitchen. Remove standing water and organic matter on the floor to discourage pest attraction and harborage.

Continue to work with your pest control company and consult them regarding fruit fly control in the kitchen.

Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
Hot holding (e.g., steamer) measured at 60C or higher.
Food contact surfaces sanitizers measured at 100-200 ppm chlorine.
High temperature dishwasher's sanitizing cycle was measured at 73.4C.
2 compartments sink with drain plugs available.
Ice machine in sanitary condition.
Kitchen hood in sanitary condition. Next ventilation cleaning due Nov 17, 2023.
