Observation (CORRECTED DURING INSPECTION): At the time of inspection 3 spray bottles with quats sanitizer concentration of quats well over 400ppm.
Corrective Action(s): Ensure bulk quats is diluted following the manufacturers directions (200ppm for food contact surfaces). Verify concentration using the available test strips.

Routine inspection:

Front and back hand sinks provided with liquid soap and paper towels.
3 compartment sink setup for manual warewashing. Test strips available for use. Reminder to use test strips to verfiy quats concentration in 3rd sink and in spray bottles.
Walk in cooler at 1-3 degrees C.
Walk in freezer at -17 degrees C.
Under the grill drawer coolers at or below 4 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C.
Beverage coolers at or below 4 degrees C.
FOODSAFE requirements met at time of inspection.
Permit posted in plain view of the public. ***Note: our records show that the 2019-2020 permit fee has not been paid yet.
***Temperature monitoring records are not maintained on a daily basis. Many days missing for the last several months. Ensure all coolers, freezers, and quats concentration is checked and recorded on a daily basis. This is as per your sanitation plan.
