Observation: * Grime/debris found around floor edges and baseboards from back exit door and walk-in cooler and in kitchen and bar area too. This is unsanitary and not acceptable. Also, storage racks have build up in kitchen and require cleaning to remove grime and build up as this is also unsanitary
Corrective Action(s): * Thoroughly clean all areas around floor corners and edges/baseboards and maintain at all times. Also, all shelves/racks must be thoroughly cleaned through out kitchen areas and storage and then maintained. Also, clean ceiling tiles where build up noted and maintain on regular basis

Observation: * Dishware storage shelf in coffee servery area requires repair/replacement as it has deteriorated and become unsanitary. Also, the counter on the under counter cooler in the bar requires replacement as it is currently a plastic table cloth and not acceptable counter top or sanitary
Corrective Action(s): * Repair/replace shelving unit in the coffee servery area as it has deteriorated and unsanitary surface. Also, replace the counter top used on the under counter cooler in the bar with a proper counter surface that is easy to clean/maintain

Observation: * The soap dispenser in the kitchen at the hand sink is broken and requires repair. This has been broken for long time.
Corrective Action(s): * Repair/replace soap dispenser at the hand sink in kitchen and maintain

Comments

* Dishwasher in kitchen and glass washer both had a final rinse concentration of 50 ppm chlorine residual at plate surface
* Sanitizer was available in kitchen and at bar area (50 ppm chlorine residual in bucket to store wiping rags)
* Cold-holding units were 4'C/40'F or colder in kitchen areas and bar as well as buffet line
* Hot-holding units were 60'C/140'F or hotter at buffet line
* Food was covered in storage areas. Ensure all leftovers are dated
* Monitoring records were available and up to date
* Staff had proper aprons and hair protection on in kitchen while handling food
* Liquid soap and paper towels were available at hand washing stations
* Note: recaulk all sink areas where caulking has deteriorated and maintain
