Observation (CORRECTED DURING INSPECTION): Hot holding of soup ranged from 55C to 57C.
Corrective Action(s): Hot holding of soup must be at or above 60C to prevent the growth of pathogens and or the formation of toxins. Soup was rapidly reheated to greater than 74C and hot held at 60C at the time of inspection.

Observation: Staff on premise did not have valid FOODSAFE Level 1 or equivalent training. This is a repeat violation - third violation in a row.
Corrective Action(s): In the absence of the operator, at least one staff member must have FOODSAFE Level 1 or equivalent training. Either additional staff must successfully complete FOODSAFE Level 1 or equivalent training or existing staff with FOODSAFE Level 1 or equivalent training must be scheduled accordingly to meet the requirements under the Food Premises Regulation.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Both sandwich coolers were at 4C.
-Customer area beverage cooler (milk) was at 3C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer was dispensing at 200ppm.
-Quats sanitizer pail was at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Manual vegetable slicer and cutter were found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
