Observation:
Found plastic lids and metal pizza pans cracked or chipped. This is not acceptable as bacteria will live in the cracks and/or pieces of plastic/metal could fall into food.
Corrective Action(s):
Throw away any cracked, chipped or damaged lid, container, utensils or equipment. Purchase new items and ensure to inspect items on a routine basis.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer -17C; hot holding units 60C or hotter; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle was 77C at the plate's surface as per max/min thermometer
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Quats sanitizer in cloth buckets was 200ppm.
- All foods store in food grade containers; covered; labeled; date coded; stored in groups with proteins on lowest shelves below RTE foods; and 6" off the floor on shelves, racks or platforms.
- General sanitation level is satisfactory. Increase cleaning frequency of floor and walls beneath and behind prep table, sinks, and equipment in the back kitchen area. There is some accumulated food debris.
- No signs of pests.
- Food handlers use utensils to handle food, and correctly use disposable gloves.
- No expired foods in use or for sale. FIFO rules followed.
- FoodSafe certified staff present.
