Observation (CORRECTED DURING INSPECTION): Cooler #1 measured 8C. Foods (sunomono) that have been prepared within 2 hours were moved to other cooler.

Comments

- The facility is equipped with hot & cold running water
- Handsinks are stocked
- 100ppm chlorine sanitizer present
- Temperatures of refrigeration units, except for the cooler noted above, meet regulatory requirements (<4C coolers, <-18C freezers)
- Temperature log is in place
- Low temp dishwasher had no chlorine residual when it was tested for the first time. The operator primed the sanitizer and 100ppm chlorine residual was detected.
- Test strip for dishwasher available
- Foods are stored off of floor, in pest-proof containers
- Hot holding (rice, miso soup) >60C
- Sushi rice mixed with vinegar pH <4.6
- No signs of pest activity noted at the time of inspection
