Observation: Soup cooked yesterday and cooled at 6pm was observed to be 11C in the walk in cooler
Corrective Action(s): Please cool your soup in smaller batches. The cooling wands are being used but are not cooling foods cold enough because the portions are too big. Obtain a 3rd cooling wand and fill soup pails only partway to assist with rapid cooling

Observation (CORRECTED DURING INSPECTION): Wiping cloths were found sitting on counters and not stored in any sanitizer. Bucket that staff indicated was bleach did not contain any detectable level of sanitizer.
Corrective Action(s): Ensure that about 1/2 tablespoon of bleach is added to the cloth bucket. Cloths should be stored in the bucket when not in use. Corrected by staff refilling the cloth bucket with new water and the proper amount of bleach.
