Observation: A few rat droppings noted under the dishwashing area and behind bar. Clean and monitor closely. Fill or cover all holes with rodent proof materials. Check dropped ceiling and above wali in fridge for droppings and take appropriate measures. (traps, barriers, etc.)

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Overall sanitation is OK but a few areas require more cleaning;
1) Under grill area there is quite a bit of grease. Clean.
2) The chopping block table is quite dirty around the sides; especially the side with the knife holder. Scrub and sanitize.
3) Bar area is packed with boxes. Dirt and droppings noted underneath and behind boxes. Pull out boxes and clean well. Store excess boxes in back storage.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) One shelving unit covered with corrugated plastic. This is not a durable or easily washable material. Remove and refinish.
2) Shelving unit by hand washing sink is in poor repair; top is rough and unwashable. Re-finish or replace.

Comments

Overall sanitation is ok.
Bleach sanitizer in use. Store cloths in buckets of bleach water.
Fridges are 4 Celsius. Very crowded but well organized.
Hand sink is stocked and working.
Dishwasher is nice and hot; reached 74.5 Celsius at plate level as per min/max thermometer.
