Observation (CORRECTED DURING INSPECTION): Potato presser was stored in unsanitary condition with debris and grime.
Corrective Action(s): Potato presser was cleaned and sanitized at time of inspection. Do not store equipment on shelving if you have not fully cleaned and sanitized the items.

Observation (CORRECTED DURING INSPECTION): 1. Observed uncovered frozen sauces in stand-up compartment freezer units.
2. 2 Roti were observed lying around exposed in the stand-up compartment freezer unit.
3. Raw chicken placed next to and above cooked items in walk-in cooler and in one of the stand-up cooler compartments.
Corrective Action(s): Frozen sauces were voluntarily discarded at time of inspection. Operator moved all raw items underneath cooked and ready-to-eat items. Ensure that all items are COVERED when in not in use, and place all raw items underneath cooked and ready-to-eat items.

304 - Premises not free of pests [s. 26(a)]
Observation: Small amount of rodent activity present beside the prep cooler.
Corrective Action(s): Remove all rodent droppings with 1 part bleach, 9 part water solution. Ensure that you saturate for approximately 15 minutes before removing the droppings. Contact your professional pest control company and continue monitoring for rodent activity and potential entranceways or harbourage sites.

Observation: 1. Lid of prep cooler is in poor condition and needs to be replaced.
2. Rubber seal of the walk-in freezer is beginning to break apart.
Corrective Action(s): 1. Replace lid of prep cooler and ensure that it is properly attached to the hinge.
2. Rubber seal of walk-in freezer to be replaced or fitted so that it is in good condition.

Comments

Routine inspection conducted. Facility is generally in good sanitary condition. The following observations were made:

1. Temperatures
- Walk-in cooler at 4C
- Walk-in freezer at -14C
- Prep cooler at approximately 2C (bottom) and 4C (top)
- Stand-up compartmentalized cooler at approximately 2-3C, compartmentalized freezer units at -14 to -16C

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at final rinse cycle of 71C at the plate (Min: 71C)
- Ventilation canopy generally well maintained and in good sanitary condition

3. Storage
- Food products generally stored at least 6" off the floor

4. Structural
- Premise is well-lit, existing light panels have been replaced by LED panels
- Ceiling tiles, walls, and floor tiles generally maintained in good condition

5. Pests
- Professional pest control company conducts routine checks monthly
- Last inspection conducted on January 30, 2019. 2 mice detected in traps, traps reset during the inspection

6. Administrative
- Permit posted and up-to-date
- Two employees on-site showed FoodSafe 1 certificates at time of inspection (Expiry: July 13, 2023)
