Most dishes are washed and sanitized manually, some are put into the mechanical dishwasher. Temperature strips provided. Ensure 71C is reached on sanitize cycle.
General sanitation is adequate.

Restaurant had a small flood from a hot water tank leaking a few days ago. All baseboards have been removed to allow drywall to dry, and are scheduled for replacement in the near future.
