306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Accumulation of dirt and food debris was observed under equipment and storage area throughout the kitchen. Water and grease was also noted on the floor by the dishwashing area. Floor drain by the dishwasher was blocked and clogged with debris Corrective Action(s): Remove materials and debris from noted areas. Clean behind equipment and under food preparation tables. Remove water spillage from the floor. Ensure floors are mopped daily using commercial degreaser. Follow manufacturer's instructions accordingly. - Handwash stations equipped with hot and cold running water, liquid soap and paper towels - All cooler units were <4C - All freezer units were <-18C - Hot held foods were >60C - High-temp dishwasher was noted at 74.2C plate level - Quats sanitizer in bucket with towels were tested at 200ppm - Food contact surfaces were maintained in sanitary conditions - Temperature logs were up to date - Food stored were all covered and protected - No signs of pests during inspection - Some rodent traps were missing or blocked.
