- Dishwasher 72 C at plate. - dishwashing sink quats at 200 ppm - handwash stations properly stocked - hot holding above 60 C - Cooling units less than 4 C - storage area clean - good **Make sure to change sani-buckets at defined interval OR when the solution appears very dirty. Both buckets needed replacement. Watch that spray bottles are changed regularly.
