Observation (CORRECTED DURING INSPECTION): Sanitizer was not set up in the third compartment of the 3-compartment sink and soapy food containers were placed into it. Staff mentioned they use all three-compartments to wash and rinse the food containers, then clean the third compartment, and sanitize the food containers.
Corrective Action(s): Do not place unclean or soapy food containers in the third compartment of the sink. Ensure that 200 ppm QUATS sanitizer is set up BEFORE beginning manual dishwashing. Wash and rinse the food containers/vegetable slicers/knives in the first and second compartments, then sanitize in 200 ppm QUATS in the third compartment for at least 30 seconds, and then air dry the dishes. Staff set up 200 ppm QUATS sanitizer during the inspection and followed an appropriate dishwashing method upon verbal direction by the area E.H.O. of Fraser Health.

Comments

Permit to Operate was posted.
Handsink was adequately supplied with liquid soap, hot and cold running water, and paper towels.
Staff were washing their hands prior to preparing sandwiches.
200 ppm QUATS sanitizer was available in the spray bottle, dispenser, and bucket with a wiping cloth.
Walk-in-cooler, sandwich cooler, under-the-counter cooler, and drinks cooler were at or below 4 degrees C (40 degrees F).
Walk-in-freezer was at or below -18 degrees C (0 degrees F).
Hot-held meatballs and soup were 60 degrees C (140 degrees F) or hotter.
No signs of recent pest activity were observed at the time of inspection.
