Observation (CORRECTED DURING INSPECTION): At the time of inspection, hot plate was used to keep a shallow pan containing cinnamon apple slices and recorded at a temperature of 38C. Staff was not sure for how long the food has been around this temperature and voluntarily discarded it during inspection.
Corrective Action(s): Please ensure that hot potentially hazardous food are stored/displayed at or above 60C.

Routine inspection conducted.

Note - As per the staff onsite, limited cooking and/or food processing is conducted in this kitchen.

Findings:
- General sanitation of the facility was satisfactory.
- Temperature of coolers recorded at or below 4C
- Stand up freezers noted below -18C
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- High temp mechanical dishwasher reached 74C on dish level during rinse cycle.
- 2 compartment dishwashing sink available for manual dishwashing of large cooking pots.
- Food was stored at least 6 inches off the floor.
- Permit posted at the front.
- No signs of pest activity observed.
