Observation (CORRECTED DURING INSPECTION): Cooked meat items from earlier today cooling in cooler unit. Items stacked on top of each other some lids tight fitting therefore trapping hot air. CORRECTED DURING INSPECTION - items repositioned by staff.

Corrective Action(s): Ensure when cooling items they are spread out to enable for proper air circulation of cold air around hot items.

Observation (CORRECTED DURING INSPECTION): Lack of knowledge by staff. Staff unaware of how to properly wash-rinse-sanitize-air dry dishes and equipment. Rice paddle required cleaning from lunch rush.
CORRECTED DURING INSPECTION - Staff were taught how to make sanitizer solution in back sink and taught how to properly wash-rinse-sanitize-air dry dishes.

Corrective Action(s): Staff require FOODSAFE LEVEL 1 training. FOODSAFE LEVEL 1 will outline how to properly sanitize all surfaces.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inform professional pest control company.
