Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Sushi rolls at temperatures of greater than 4 degrees Celsius. Sushi rolls on wooden boat elevated out of cold holding unit. CORRECTED DURING INSPECTION - items placed directly onto cold holding unit.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (1) Knives stored in dirty crack of butcher's block - CORRECTED DURING INSPECTION. Do not continue to store in this area as it is not easily cleanable.
2) Ice scoop stored on top of ice machine - CORRECTED DURING INSPECTION. Ice scoop is to be stored in readily cleanable container.
3) Rubbermaid lids inside meat cooler have not been cleaned. Raw blood observed to have dripped on a lid but no raw meat found about lid. Rubbermaid lids and tubs stored in back area in unsanitary condition. Items have not been cleaned prior to placing into long term storage.

Items Corrected from Previous inspection report:
- Additional cleaning has occurred
- Rodent droppings have been cleaned
- Pest Technician has added traps for cockroaches to area surrounding handsink and dishpit. Cockroaches found on traps surrounding hand sink - continue to trap. Add trap to dishpit as one is missing
- Sanitizer solution has been added to Sushi area (200ppm Chlorine)
- Time tracking of sushi rolls is occurring
- Knife rack has been removed from butcher block
- Other butcher block has been cleaned and sanitized
- Funnel in drain of dishpit has been cleaned
- Fire suppression system has contract booked for repairs - ensure this area is completed IMMEDIATELY
- Follow instructions on pest technician report (including sealing the back door to prevent against pest entry)
