Observation (CORRECTED DURING INSPECTION): Observation 1): Raw eggs were stored on top shelves of the stand-up cooler.
Correction: Move the eggs on the bottom shelf of the cooler. Operator moved the eggs.
Rationale: Raw eggs are potentially contaminated foods that can crack and drip into foods store below them - especially ready-to-eat foods that will not be further cooked.
Observation 2): A box (cardboard) of potatoes was stored on the ground in the back storage area.
Correction: Store food at least 6" off the ground. Operator moved the box of potatoes on top of another box at the time of inspection.
Rationale: Floor is a potentially contaminated surface that can cross-contaminate food. Food stored on the floor is also prone to pests and can encourage pest activity.

Observation (CORRECTED DURING INSPECTION): The doors of back storage rooms were left open.
Correction: Close the doors or install screen doors to allow for ventilation. Operator closed the door.
Rationale: Open back doors allow easy access of pests inside the facility especially in storage rooms where food is stored.
