Observation (CORRECTED DURING INSPECTION): Third compartment of sink used for sanitizing dishes contained a 0 PPM quat residual.
Corrective Action(s): Ensure that sanitizer water used for sanitizing dishes and food contact surfaces has a 200 PPM quat residual. Staff member was diluting sanitizer from automatic dispenser. Staff member was instructed to fill sink with sanitizer directly from dispenser without dilting it. It was measured using a quat test strip and was found to have a 200 PPM residual. Acquire new test strips to confirm concentration.
